A favorite recipe~ Cream Tuna on Toast ~ Quick and easy

One of my favorite standbys is Creamed Tuna on Toast. It’s quick easy, and paired with a veggie, pretty nutritious.
I’ve never really had a ‘recipe’ for it, I just kindof mixed things together. Tonight, I found a recipe online and found it was not what we are used to, so I thought I’d post my own.
First, though, I must say….cream of celery soup does not belong in Creamed Tuna on Toast!!! YUK! It may be easy, but YUK!
I am often surprised at what people come up with to use condensed soups for…cream of chicken, cream of mushroom, cream of cheddar, and cream of celery soups can be found as a base to a lot of recipes. I’ve heard of people making mac & cheese from cream of cheddar soup poured over noodles. This is just unbelievable to me. It doesn’t even sound good! Now, maybe it is…but I’m not sure I’ll ever try it. lol
So…on to my ‘recipe’

First, a white sauce
1/4 c. butter or margarine
1/4 c. flour
2 c. milk

Salt & Pepper to taste
bread for toast

Melt the butter over med-low heat until melted, being careful not to heat too high and burn it. Add the flour and stir until it starts ’sizzling’. Add milk while whisking.

Heat over medium heat until the sauce bubbles. Add 1 can of tuna, salt and pepper, to taste.

You can double, triple, quadruple this recipe all your heart desires. If you would like to save on milk, you can do 3 parts milk to 1 part water (with the recipe above, that would be 1 1/2 c. milk and 1/2 c. water) but I would not try half water and half milk. It’s just too watery and bland.

Toast bread and pour about 1/3 c. of the creamed tuna on each piece of bread. I personally like to butter my bread first, and my hubby likes cheese on his.

Pumpkin Cheesecake

The other day I posted about our new holiday items. I just have to say that our Pumpkin Cheesecake fragrance is soooo good! The evenings are getting shorter, and the nights cooler. Before we know it, fall will be here!

Yummy recipe

My husband and I sometimes go to a wine tasting at the local cafe’. We really enjoy the wine, food and the company. This past winter, while we were there for the wine tasting, we had a grilled cheese sandwich and tomato bisque. The tomato bisque was to die for!!! I have been searching for a good recipe ever since. A friend of mine found one, and I made it my own, by tweaking it some. I am posting it here. This is yummy, hearty and a little spicy. Enjoy!
2 T. butter or oil
2 onions, chopped
1 clove garlic, minced
1 15oz can whole tomatoes
1 15oz can tomato sauce
2 cups chicken stock (I use Swanson’s reduced sodium chicken broth) vegetable stock can also
be used
1/4 C. uncooked rice
salt & pepper to taste
1 T chopped basil (or 1 t. pesto)
1/4 t. dried thyme
2 C. half-and-half
several dashes tobasco or other hot pepper sauce (I use Tapatito)
(may need 1 6oz can tomato paste)

Melt butter in a large saucepan and stir in the onions and garlic. Saute until soft and golden over medium-low heat. Pour in the entire can of tomatoes (juice included), chicken stock, rice, salt, pepper, basil, and thyme. Bring to a boil, then reduce heat, partially cover, and simmer for about 30-35 minutes.

Puree the soup in a blender, then pour back into the saucepan. Stir in the half-and-half, the can of tomato sauce, and splash with hot sauce, and taste for seasoning. If the soup does not taste ‘tomatoey’ enough, add some of the tomato paste. I will try a little more next time, and update the recipe. Heat the soup just to a boil, then ladel into bowls.

Garnish with sliced basil leaves or minced parsley.

Great with grilled cheese sandwiches :)

Nothing new today

Not much going on today. My little guy is sick, so I spent a lot of time taking care of him. I did answer a post on CL for sponsors though, and possibly could have a fundraiser in the works :)
